5 Minute Meal Prep with Salad Jars

If you’re anything like me, lunch is the most difficult meal of the day to accommodate a healthy diet. When work gets busy (which seems like always), it’s extra tempting to get by with just a coffee, grab a treat from the vending machine, or run across the street to Dunkin Donuts. Needless to say, I’ve become quite the fan of meal prep! I’ve spent the past few weeks experimenting with different recipes to find the easiest, yummiest, macro-friendly lunch foods that I can bring to the office and eat ‘on the go.’ Give this salad jar a try and substitute your favorite ingredients for some extra variety. 

7 Ingredient Salad Jar

Ingredients:
1 mason jar
Romaine lettuce (spinach or arugula works too!)
Tomatoes
Persian cucumbers (regular cucumbers are fine)
Shaved carrots
Radishes and/or shaved red cabbage
Turkey or chicken (slice into small chunks)
Quinoa

Directions:
Layer the ingredients in the order they are listed. Place the lid(s) on your mason jar(s) and store in the fridge for several days. When you are ready to eat your salad jar, just pour it in a bowl and toss! I like to use a creamy avocado based dressing to round out my macros (carbs + protein + healthy fats). Enjoy!
